About

The first edition of the Workshop on Fermented Foods and Beverages will be held in the city of Viçosa, at the campus of the Federal University of Viçosa. The event aims to bring together researchers with expertise in bioprocesses, faculty members, students, and professionals from the productive sector in order to promote scientific updates on the topic and disseminate results from research recently developed in Brazil. It also seeks to create a space for integration and cooperation among research groups from different regions of the country, encouraging the exchange of experiences, the consolidation of collaborative networks, and the establishment of strategic partnerships for the development of future projects. Furthermore, the event intends to highlight the importance of fermented foods from the perspective of human well-being and health promotion, considering recent advances in the understanding of the role of the microbiome of fermented foods and beverages in human physiology and the intestinal microbiota. In this context, the 1st Workshop on Fermented Foods and Beverages is conceived as a strategic initiative to foster innovation, interdisciplinarity, and the training of highly qualified human resources, aligning with the principles and institutional objectives of Coordination for the Improvement of Higher Education Personnel (CAPES), which are focused on strengthening research, advanced education, and the integration between science, technology, and society.
